Question

Can this waffle maker make only one waffle at a time?

Since the two waffles are top & bottom, is there a problem with consistency if you only make one waffle at a time?

MCaudill, no there is no problem with consistency at all if you only want to make one. You just have to make sure that you still flip it over. The batter has to completely coat the entire waffle plate. You can cook it either from that position or flip it back on top.
